Cinnamon Doughnuts

Ingredients

2 cups plain flour

3 Tbsp sugar

1 Tbsp baking powder

1 teaspoon salt

60g butter cold, chopped into tiny pieces

3/4 cup milk

Vegetable oil for frying

Cinnamon Sugar Coating

1/3 cup caster sugar

2 teaspoons ground cinnamon

Instructions

  1. Mix Cinnamon sugar coating and set aside

  2. Combine dry ingredients in a mixing bowl.

  3. Using a potato masher or whisk, cut butter into your flour mixture until it resembles coarse crumbs (you can use a food processor to blitz it)

  4. Add milk and mix until all ingredients are combined. 

  5. Transfer dough onto a well-floured surface and knead lightly until it forms a smooth ball. 

  6. Using a soup spoon, break dough into tablespoonful sized pieces and roll into smooth, tight balls. Flatten the ball slightly and put a hole into the middle of the dough.  Stretch the dough slightly to resemble a donut. 

  7. Heat oil to approx. 180 deg. Celsius in a medium sized saucepan and keep heat medium low.   

  8.  Lower doughnts a few at a time and fry for about 1 minute on each side.  Keep turning the donuts to achieve an even golden color.  

  9. Remove with a slotted spoon onto a paper towel-laden plate.  

  10. Roll them in the cinnamon sugar.  Serve warm
